I would like to point out in that dinner I used an aneheim pepper, not knowing they are HOT AS HELL. If you like things crazy spicy, go for it. Otherwise use some other mild green pepper. Other than that, they were delicious and filling. Definitely a family favorite.
Ingredients
6 boneless skinless chicken breasts
1 sweet onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 green pepper, sliced
3 cloves of garlic, minced
3/4 cup of evoo
3 tbs lime juice
2-3 tbs honey
chili flakes
salt & pepper (optional)
Preheat oven to 450 F.
In a bowl mix together oil, honey, juice, garlic, s & p, and chili flakes (to taste). In a freezer bag add chicken and half of the marinade. Then in a second bag add your veggies and the other half of the marinade. I cooked on 2 separate baking sheets lined with foil (chicken on one and veggies on the other). Bake for 10 to 12 minutes. Then turn on your broiler and cook for another 5 minutes until the edges of the veggies are charred and chicken is golden.
Remove from oven and allow the chicken to rest for a few minutes before slicing. Slice chicken thin, and get out your toppings. I used cheese, greek yogurt, and salsa. Heat up your tortillas and there you go! Container count for 2 fajitas is 1 yellow, 2 red, 2 green, 1 blue.
