Healthy Oven Baked Chicken Fajitas

So if you can't tell by my recipe round up, we really like Mexican food in our house. You also can't beat the fact that a lot of it can be pretty quick and easy to wish up. So here are my fajitas. I posted these on facebook and you guys hopped on a recipe request. Well here it is!

I would like to point out in that dinner I used an aneheim pepper, not knowing they are HOT AS HELL. If you like things crazy spicy, go for it. Otherwise use some other mild green pepper. Other than that, they were delicious and filling. Definitely a family favorite.



Ingredients

6 boneless skinless chicken breasts
1 sweet onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 green pepper, sliced
3 cloves of garlic, minced
3/4 cup of evoo
3 tbs lime juice
2-3 tbs honey
chili flakes
salt & pepper (optional)

Preheat oven to 450 F.

In a bowl mix together oil, honey, juice, garlic, s & p, and chili flakes (to taste). In a freezer bag add chicken and half of the marinade. Then in a second bag add your veggies and the other half of the marinade. I cooked on 2 separate baking sheets lined with foil (chicken on one and veggies on the other).  Bake for 10 to 12 minutes. Then turn on your broiler and cook for another 5 minutes until the edges of the veggies are charred and chicken is golden.


Remove from oven and allow the chicken to rest for a few minutes before slicing. Slice chicken thin, and get out your toppings. I used cheese, greek yogurt, and salsa. Heat up your tortillas and there you go! Container count for 2 fajitas is 1 yellow, 2 red, 2 green, 1 blue.

Healthy Pizza!!

If there is one thing I love, that also makes me a little ninja turtle like....it is PIZZA.
I love, love, LOVE pizza! I also really love all of the changes I have made to my health and fitness, so typically these things don't go hand in hand.

After running errands all day yesterday and doing some art and science, the kids wanted pizza for dinner. Who was I to deny them this delicious food? I made them a deal...we could have a pizza night so long as 1) we put veggies on it. 2) we would get everything at trader joe's so that it was as healthy as possible. Yay, everyone wins! This too me about 30 minutes to prep and bake. Can we say quick and easy? Ya'll already know how I feel quick and easy these days. This recipe is for 2 flat bread pizzas. It was enough for the 5 of use with a couple of pieces left over (because the little ones don't eat that much). I served fresh fruit on the side for the kids and salad for hubs.

Ingredients

2 organic whole wheat lavash flat breads
1 jar of Trader Joe's pizza sauce
2 cups  shredded mozzarella (more or less)
1/2 yellow bell pepper, diced
1/2 red onion, diced
1 cup mushrooms, diced
1 handful of spinach, chopped
1 cup chopped or crumbled turkey sausage
Turkey Pepperoni
* Any other toppings of choice






Preheat oven to 450.

I baked the flat breads in the oven for 5-10 minutes before actually making the pizzas to get the bread a bit toasted. Otherwise you will wind up with a soggy pizza crust. Who wants that? Gross.  I added the  sauce sparingly because with flat breads, if you add too much it will be to heavy or soggy. So just a thin spread of the sauce. Then you just assemble the pizza as you wish and bake in the oven for about 10 minutes until the edges of the cheese just start to turn golden and bubble. Let cool and slice into 6 pieces per pizza and serve with a nice side salad.

Fix or Country heat count per 2 slices (or half a flatbread...I made mine and hubby's pizza 4 slices) would be 1 yellow, 1 red, 2 green (if you have a side salad), 1 blue.

The family loved it, and I'm happy that I made a dinner that hit the spot. I love finding ways to make comfort type foods health (ier) for us. 4 Ingredient Slow Cooker Chicken Tacos

As school starts back up and lives get busier, I need quick and easy dinners! Otherwise no one is eating until late and the house will be messy to boot. Enter the glorious, should really be used more often crockpot. I am really starting to see the value in this contraption. Now that I am on this journey for better health, I am constantly looking for ways to create quick, clean, and easy meals for the entire family.



I love that this recipe only uses 4 ingredients. It's so simple and clean, but there is so much flavor! I had this hang up for the longest time that I couldn't be healthy because being on a "diet" meant that the food had to be bland and boring. I just couldn't bare the thought of that, I still can't. Whatever I make has to taste good. I mean, if I don't like it...my kids and husband won't like it. Then that defeats the point of eating healthy. It shouldn't be a punishment to feed your body better food! Anyways, enough of my word vomit. Let's get to the FOOD!







Ingredients

3 lbs Boneless skinless chicken breasts
1 cup Mexican hot sauce (Chalula or Tapatio)
2 cups of salsa (organic, homemade, go for as clean as possible)
2 tbs of minced garlic (I love garlic and use more)

Add all of the ingredients to the slow cooker and cook on low for 6-8 hours (or high for 4).
You can also start with frozen chicken, just cook increase the time by 2 hours. Then shred with a fork in the crockpot and serve with your favorite toppings!

See, wasn't that easy peezy?! For my 21 day fix and Country Heat doing friends, the container count is 1 red (measure it out people!) and about 1/2 of a purple (or green..depends on what salsa you use or how you count salsa). If you want to go no carb, just throw it in a bowl with some shredded cabbage and your taco toppings. Super yummy and filling! Let me know in the comments below what you thought of the recipe. 21 day fix Enchiladas

Wait, what? You mean I can have enchiladas too??

Oh yes my friends, you can. Let me tell me you, even the kids liked them! I had a hankering for enchiladas like no other, so I turned to Pinterest and searched high and low for a fix approved recipe that looked really good. The one that I came across was close to what I was looking for.

I doctored things just a bit to be more of what I was looking for...so let's start with ingredients  (because those kind of help).

1 lb chicken breasts boiled and shredded
12 corn tortillas
1 can CLEAN enchilada sauce
* That means read the ingredients...or make it from scratch!
1 can organic diced tomatoes w/ green chiles
2 mini sweet peppers diced
1/2 sm onion diced
Cilantro chopped
Diced black olives (small can rinsed)
2 cups reduced fat shredded mexican cheese
1 1/2 cottage cheese
1/2 cup greek yogurt
Shredded cabbage
Greek yogurt to top for sour cream sub.
Salt free taco seasoning (I made my own)

 Begin by boiling and shredding the chicken. A hand mixer works like magic for shredding. Chop all of veggies andget those ready as well. Drain and rinse the tomatoes and add all the veggies (minus cabbage) in a bowl. Season your chicken and add those veggies.

Now  mix the cottage cheese, yogurt and half of the cheese. I used my blender for this and added a little enchilada sauce for liquid. Now add this mixture tti the chicken  (make sure you mix it well).

Now lightly grease your 9x13 baking dish and add just a little of the sauce to cover the bottom of the dish. In the microwave, cover 3 tortillas at a time with paper towels and heat for 30 secs, then put a spoonful of cheese mix on the tortilla along with the meat, then roll and olace in dish. Once finished rolling the tortillas, cover with remaining sauce and sprinkle with the rest of the cheese. Bake at 350°F for 30 minutes. Top with shredded cabbage and a dollop of greek yogurt.
** As a side note, I think next time I will make it with green sauce as that is my favorite..and I will swap the cheese with peper jack**

Container count for 2 enchiladas:

2 red, 2 green, 1 blue, 1 yellow, 1/4 orange

Confessions of a foodie...

Confessions of a foodie...
I love pizza and I love chocolate. And bagels....and well, food! As I'm getting my strength back I want to eat everything in this house! But I can't undo all of this hard work. Sometimes it's hard to find the drive to get up and grill a bunch of chicken and roast veggies and take the TIME to really prepare my time for success. But it needs to be done. So that is just that!

What I have learned from the 21 day fix and my beachbody family is that it's 80/20. There is no perfect and you have to learn how to enjoy the things you love in moderation. I have learned that the things and ways that I used to eat, did my body and health no favors. That being lazy wasn't going to save me from the helplessness of where I was at (physically, emotionally, spiritually).

What I have learned is that I am a part of an organization that truly values health, fitness, and wellness. I am encouraged to constantly grow in any way I can. Does your job do that? Does your job tell you "I want you to be more successful, I want you to grow in all areas of your life!" ? I didn't think so.

Struggles

The Struggle Is Real....


After having a major infection in my intestines,  and then camping (and eating awful!), it has definitely been a challenge to get back into the swing of things. I have lost 38 lbs since the beginning of my journey 5 months ago. I have lost 72 in the last years.... I still have about 30 lbs to go before I hit my first major goal.

I am so grateful that I found beachbody and the community. I have found success and friendship in a way I never could before. I have spent hours at the gym amd then ruined it in the kitchen...or have a ton of knowledge yet no clue on how to apply it. Now I have all of the tools I need. I just have to keep grinding it out. 

I want to out live my mom who passed away at 39 years old. I want to be around to drive my family crazy for many years to come. I want to help out with finances, and be home with my kids. I want to change lives and help some people live longer and happier. 

But first, I need to work on me. So I will get up early no matter what and get my power hour in, my workout,  my shake, and all of my errands.
