21 day fix Enchiladas

Wait, what? You mean I can have enchiladas too??

Oh yes my friends, you can. Let me tell me you, even the kids liked them! I had a hankering for enchiladas like no other, so I turned to Pinterest and searched high and low for a fix approved recipe that looked really good. The one that I came across was close to what I was looking for.

I doctored things just a bit to be more of what I was looking for...so let's start with ingredients  (because those kind of help).

1 lb chicken breasts boiled and shredded
12 corn tortillas
1 can CLEAN enchilada sauce
* That means read the ingredients...or make it from scratch!
1 can organic diced tomatoes w/ green chiles
2 mini sweet peppers diced
1/2 sm onion diced
Cilantro chopped
Diced black olives (small can rinsed)
2 cups reduced fat shredded mexican cheese
1 1/2 cottage cheese
1/2 cup greek yogurt
Shredded cabbage
Greek yogurt to top for sour cream sub.
Salt free taco seasoning (I made my own)

 Begin by boiling and shredding the chicken. A hand mixer works like magic for shredding. Chop all of veggies andget those ready as well. Drain and rinse the tomatoes and add all the veggies (minus cabbage) in a bowl. Season your chicken and add those veggies.

Now  mix the cottage cheese, yogurt and half of the cheese. I used my blender for this and added a little enchilada sauce for liquid. Now add this mixture tti the chicken  (make sure you mix it well).

Now lightly grease your 9x13 baking dish and add just a little of the sauce to cover the bottom of the dish. In the microwave, cover 3 tortillas at a time with paper towels and heat for 30 secs, then put a spoonful of cheese mix on the tortilla along with the meat, then roll and olace in dish. Once finished rolling the tortillas, cover with remaining sauce and sprinkle with the rest of the cheese. Bake at 350°F for 30 minutes. Top with shredded cabbage and a dollop of greek yogurt.
** As a side note, I think next time I will make it with green sauce as that is my favorite..and I will swap the cheese with peper jack**

2 red, 2 green, 1 blue, 1 yellow, 1/4 orange
