4 Ingredient Slow Cooker Chicken Tacos

As school starts back up and lives get busier, I need quick and easy dinners! Otherwise no one is eating until late and the house will be messy to boot. Enter the glorious, should really be used more often crockpot. I am really starting to see the value in this contraption. Now that I am on this journey for better health, I am constantly looking for ways to create quick, clean, and easy meals for the entire family.



I love that this recipe only uses 4 ingredients. It's so simple and clean, but there is so much flavor! I had this hang up for the longest time that I couldn't be healthy because being on a "diet" meant that the food had to be bland and boring. I just couldn't bare the thought of that, I still can't. Whatever I make has to taste good. I mean, if I don't like it...my kids and husband won't like it. Then that defeats the point of eating healthy. It shouldn't be a punishment to feed your body better food! Anyways, enough of my word vomit. Let's get to the FOOD!







Ingredients

3 lbs Boneless skinless chicken breasts
1 cup Mexican hot sauce (Chalula or Tapatio)
2 cups of salsa (organic, homemade, go for as clean as possible)
2 tbs of minced garlic (I love garlic and use more)

Add all of the ingredients to the slow cooker and cook on low for 6-8 hours (or high for 4).
You can also start with frozen chicken, just cook increase the time by 2 hours. Then shred with a fork in the crockpot and serve with your favorite toppings!

See, wasn't that easy peezy?! For my 21 day fix and Country Heat doing friends, the container count is 1 red (measure it out people!) and about 1/2 of a purple (or green..depends on what salsa you use or how you count salsa). If you want to go no carb, just throw it in a bowl with some shredded cabbage and your taco toppings. Super yummy and filling! Let me know in the comments below what you thought of the recipe.
